Energy Bread with Dried Fruit & Nuts
These bread bars can easily be stashed
in your backpack for a long hike when
extra energy is required

2 cups whole-wheat or graham flour
1/4 cup all-purpose flour
1/4 cup soy flour
I/8 cup wheat germ or quick oats
1/4 - 1/2 cup nonfat regular dry milk
1/2 tsp. salt
1/2 tsp. baking powder
1/2 cup honey
1/4 cup + 2 Tbsp. brown sugar
I/8 cup oil
1 cup chopped dried cherries, apricots, raisins, dates, etc.

(If you are allergic to nuts, simply omit the nuts and substitute with 1-2 cups more dried fruit.)

In a large bowl, add flours, wheat germ, dry milk, salt and baking powder. Whisk together. In a medium bowl, add honey, brown sugar, oil, fruit and nuts. Stir together and mix very well. Add the moist mixture to the flour mixture and stir well. The mixture should be stiff but if it doesn't quite hold together add a bit more water. Roll out to 1/2" thick on cookie sheets. Use a pizza cutter or sharp knife to score your bars just before baking. Bake for 60 minutes in a preheated 300
o oven. Makes 24 pieces
