Spiced Pintos and Cheese Quesadillas 8 Homemade Flour Tortillas (see below) |
In a medium bowl. coarsely mash beans. Add mayonnaise, vinegar and chili powder. Stir until blended. Lightly brush both sides of each tortilla with water. Spread the bean mixture evenly over four of the eight tortillas. Spread the cheese, onion and cilantro. Set the other four tortillas on top. Fry in an oiled skillet until golden on each side. Use a pizza cutter or kitchen shears to cut wedges like a pizza. May be served with a dollop of tomato sauce.

Homemade Flour Tortillas
This is a fun recipe to make-perfect for burritos.
1 cup all-purpose flour
1 cup whole-wheat flour
1/2 tsp. salt
3/4 cup water
1 tsp. oil
In a large bowl, mix together both flours and salt with a whisk. Mix the water and oil in a small cup and slowly add just enough to make a soft dough. If you find the dough to be sticky, add a bit more flour. Knead 5 minutes. Cover the dough with a towel and let rest 20 minutes. Make 10 balls of dough and roll each into a thin 10" circle. Cover the tortillas with a damp towel to avoid drying out. Cook on a medium-hot griddle. 10 tortillas
Thick and Creamy Cheese Sauce
1/4 cup white cream sauce mix
1 cup water
1/4 cup cheese powder
1/4 cup water
dash of cayenne pepper to taste
In a small saucepan whisk together white sauce mix and 1 cup of water. Heat and when it's warm add the cheese powder and 1/4 cup water. Whisk again. Add the cayenne pepper and stir with a wooden spoon over medium heat until thick. This is a great sauce to spoon over veggies, pasta, or to use a bread dipping sauce similar to a fondue. Makes 1 1/4 cups
